Yams

(Yams w/ginger+scallions)
1 large yam
1/8 tsp Kosher salt
1 1/2 Tb olive oil
4 cloves garlic
2 large shallots
2 scallions
1 jalapeno
1 1/4" piece of ginger
dash pepper
1/2 c basil leaves
1 1/2 Tb lime juice


Boil pot of water while cutting yams into thick rounds. Slice garlic, shallots, and jalapenos thinly. Peel ginger. Cut scallions into 1" pieces, and cut very thin ginger matchsticks.
Add yams to boiling water. Cook 8 min.
Drain yams and set aside.

Add oil to pot. Heat over med-high and add garlic, salt, pepper, ginger, shallots, scallions, and jalapenos. Cook 1-2 min, then reduce to med-low and cover. Cook 17 min, while chopping basil.
Uncover pot, add basil, and cook 30 seconds. Spoon mixture over yams.
Season with salt and pepper, then drizzle with lime juice.
Serves 2-4
