Beans Romescu

Once we got to New Bern, it felt like a weight lifted from our shoulders. Big water! Big water! Lengthy causeways and expansive views and sailboats. Sorry, we were losing light, so we have no pictures of the moment.

Our first night at Candlewood Suites, I made this green bean dish. It was quite yummy. Here you go:

1 lb green beans, ends trimmed
1/2 tbs olive oil
1/8 c shallots, finely chopped
1 garlic clove, chopped
1/2 tsp chipotle chile in adobo sauce, minced
1/4 tsp smoked paprika
1 med red bell pepper, roughly chopped
1/8 c almond slivers
1/2 tbs lemon zest
1/4 tsp salt
freshly ground black pepper

Boil green beans for 2 min. Plunge into cold water and drain.

Heat olive oil, add shalots, and saute 3 min. Add garlic, chipotle, and paprika and stir. Add beans and saute about 2 min. Add bell pepper and heat through.

Take pan off heat; add almonds, lemon zest, salt, and pepper; and mix well.
